Starch
What is starch?
Starch is a complex carbohydrate that is a digestible plant polysaccharide. Polysaccharides have a chain of ten or more monosaccharides (single sugar) bonded together. Acutally, many starches can contain over 3,000 of these bonds.
How is starch digested?
After consumption, the sugar in these starches are broken down and converted into energy, or stored as fat. However, because of how many bonds there are, the sugar is released more slowly into your system than simple sugars. This is beneficial because it eliminates blood sugar spikes. Starches can naturally be found in whole grains, vegetables, and legumes.
